AGING: AFTER THE FIRST
FUNDAMENTAL DECANTING, THIS
SASSELLA MATURES IN SMALL,
FRENCH OAK BARRELS AND IN LARGE
OAK BARRELS FOR A PERIOD OF
OPTIMIZATION. ONCE BOTTLED IT IS
REFINED FOR MORE THAN FIVE
MONTHS PRIOR TO BEING SOLD.
ORGANOLEPTIC CHARACTERISTICS:
RUBY RED COLOUR WHICH ON AGING
TENDS TOWARDS GARNET, PERSISTANT
AROMA WITH A BOUQUET OF VIOLET,
A DELICATE AND VELVETY TASTE.
ALCOHOL CONTENT: 13 %
TOTAL ACIDITY: 5,7 G/L
