MAPS: SONDRIO AND CASTIONE ANDEVENNO. LYING EAST TO WEST ON THE RHAETIC SLOPES WITH EXPOSURE TO THE SOUTH

VINYARD: OPTIMAL POSITION LYING BETWEEN 350 AND 450 METRES ABOVE SEA LEVEL.

SOIL: WATER PERMEABLE GROUND, SLIGHTLY FERTILE, CLAYEY, SANDY AND COMPACT.
  
WINE PROCEDURE: PRODUCED BY SUBMERGED ‘HOOD’ BY BRINGING THE TEMPERATURE TO 30° FOR THE FIRST FEW DAYS OF FERMENTATION WHICH IS THEN LOWERED AND CONTROLLED.

AGING: AFTER THE FIRST FUNDAMENTAL DECANTING, THIS SASSELLA MATURES IN SMALL, FRENCH OAK BARRELS AND IN LARGE OAK BARRELS FOR A PERIOD OF OPTIMIZATION. ONCE BOTTLED IT IS REFINED FOR MORE THAN FIVE MONTHS PRIOR TO BEING SOLD.

ORGANOLEPTIC CHARACTERISTICS: RUBY RED COLOUR WHICH ON AGING TENDS TOWARDS GARNET, PERSISTANT AROMA WITH A BOUQUET OF VIOLET, A DELICATE AND VELVETY TASTE.

ALCOHOL CONTENT: 13 %

TOTAL ACIDITY: 5,7 G/L
